I’ve been making Jerky for the 20 years, The Jerky Emporium in Oklahoma City used to carry my jerky when I was making it under the name “Jim’s All Dried Out” and has said I had the best recipe out of the 150 brands he carries.
I use USDA top sirloin beef, and all fresh ingredients: garlic, onions, chili peppers, Pineapple juice etc. NO PRESERVATIVES or Nitrites!! EVER!!
Homemade My Way marinates the beef in a commercial vacuum tumbler (This infuses the marinade deep and evenly so there are no “dead spots). Then we vacuum pack in a commercial vacuum pack machine not a little store machine that tends to lose the vacuum often.
